Five Ways To Add Oysters To Your Thanksgiving
Oysters are such a spectacular add on to large gatherings! Not sure how to add them to your Thanksgiving dinner?
Here are a few ideas:
Oyster Stuffing
- 4 T. butter
- 1 onion diced
- 2 ribs celery diced
- 4 cups stale bread diced
- 1 cup oysters chopped, liquor reserved
- 1/2 cup pine nuts toasted
- 2 T. fresh parsley minced
- 1 t. basil
- 1/2 t. paprika
- 1/2 t. salt
- 1 cup chicken or garlic broth

Oyster Casserole
- 2 pints fresh jarred oysters (find them in the seafood section)
- 4 cups medium coarse saltine cracker crumbs – about 2 sleeves
- 1 cup melted butter (2 sticks)
- 1-1/2 cups half & half
- 1/2 cup oyster liqueur (the liquid in the oyster jars)
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon salt

Scalloped Oysters
- 4 tbsp. (1/2 stick) unsalted butter
- 2 leeks, trimmed, halved lengthwise and thinly sliced
- 1 tbsp. all-purpose flour
- 1/2 c. dry vermouth
- 1/2 c. heavy cream
- 2 (16-ounce) containers fresh oysters, drained, reserving 2 tablespoons brine

- 2 pints fresh Louisiana oysters in liquid
- 1 lb. ground round
- 10 slices day-old white sandwich bread
- 3/4 cup water
- 2 sticks butter
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 2 tablespoons minced garlic
- 2 teaspoons chopped fresh thyme leaves
- 1 teaspoon cayenne pepper salt to taste

- vegetable oil for the pan
- 1 clove garlic, minced
- 10 oz fresh baby spinach
- 125 g cream cheese, room temp
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 can artichoke hearts, drained and chopped
- 2 cans (85g) Ocean’s Smoked Oysters in Sunflower Oil, drained (170g total)
